Do you guys think that chicken marinated in a balsamic vinegar based marinade would go well with a dish called "Spinach and Rice Gratin"? Its main ingredients are spinach, brown rice, mozzarella, and Parmesan.

Side question: Do you think I could substitute Basmati rice (which I already have) for the brown rice (which I'd have to buy special)?

I'm always bad with knowing how flavor combinations will work (if they're not ones I've tried) but I would say that the gratin dish MAY work depending on the cooking method. Brown rice takes substantially longer (up to three times longer) to cook than white/basmati rice. If you're using cooked rice, you'll be good to go. If you're using uncooked rice, you'll need to compensate for the differences in cooking times.

Yes, and yes. I'm actually not a brown rice fan (I know!) and so I'd sub the basmati anyhoo.

I'm planning on broiling the chicken. I'd prefer to grill it, but don't own a grill, so that's out.

The gratin recipe calls for cooked rice, so if cooking time is the major issue it shouldn't be a problem. Thank you!
