Having signed up for a CSA, Tom & I are expecting to end up with a lot of vegetables this year. I have one good vegetarian cookbook, but I'm looking for recommendations for others, especially ones that are veggie-centric but not vegetarian.

Considered doing any canning/preserving? I'll check my cookbook shelf before Thursday, I should have a few low-carb ones with good veggie recipes, and I'll see what else is lurking there that might be useful to you.

I'm not opposed to the idea of preserving, but it will depend on how much we get of what.

The Enchanted Broccoli Forest is one of my favorites. It is a vegetarian cookbook, but the quiche recipe is the best I've ever found!

Victory Garden Cookbook is great, but, I believe it's hard to track down.. Moosewood's cookbooks are vegetarian but not vegan & many of the recipes lend themselves to flexiterian tweaks.

I also recommend the Moosewood cookbooks! They are great. I'll try to scan in a couple of my favorite recipes and email them to you - I always like to try a couple of recipes from a cookbook before I commit to buying them :)
